Gingerbread Cake

Ingredients

  • 3 1/2 C. flour
  • 1 1/2 C. dark brown sugar
  • 1 Tbs baking soda
  • 1 Tbs baking powder
  • 1 1/2 tsp. ginger
  • 1 1/2 tsp. nutmeg
  • 1 1/2 tsp. cinnamon
  • 1 1/2 tsp. allspice
  • 1 1/2 C. milk (preferrably, sour; NOT buttermilk)
  • 1 full jar of Grandma's dark molasses (green label)
  • 1 C. Lard
  • 3 eggs

Instructions

Preheat oven to 350 degrees. Grease and flour 9 x 13 pan (8 x 12 is okay, too). DO NOT use mixer, when mixing the following ingredients.

Thoroughly, mix ALL dry ingredients together, in LARGE bowl. Add ALL wet ingredients. Mix with HANDS (you can use a spoon; but, it will be difficult), until combined well (will have SMALL lumps).

Pour into pan and bake for 1- 1 1/2 hour. After an hour, start checking the middle with toothpick method. Done when toothpick comes out clean (or a knife).
