Delicious Yeast Rolls

Ingredients

Serves: yields 4 dozen rolls

Mix together and let sit until needed:

  • 1 pack of dry yeast (quick rising)
  • 1/4 cup of warm water, not too hot

Stir together in a large bowl:

  • 2 cups of warm water
  • 1/4 tsp. salt
  • 1/2 cup sugar
  • 1/2 cup lard
  • 2 lightly beaten eggs

Blend together:

  • 31/4 cups white flour (half whole wheat or rye if you want)
  • 1/2 cup dry milk

Add yeast mixture to water and egg mixture, stir gently in a large bowl. Add flour and dry milk blend, with a whisk, getting the lumps out. Add an additional 3 1/4 cups of flour, a little at a time, this will turn into dough, and pull away from the sides of the bowl. You may need to add a little more flour if the dough remains sticky.

Instructions

  • Cover and let rest for 10 minutes
  • Knead on a floured pastry cloth
  • Let rise to double in size, in buttered bowl
  • Form into rolls, half the finished size
  • Let rest to double size
  • Bake at 375° for 15 minutes, or until golden brown
  • Brush with butter
