Delicious Yeast Rolls
Serves: yields 4 dozen rolls
Ingredients Mix together and let sit until needed:
- 1 pack of dry yeast (quick rising)
- 1/4 cup of warm water, not too hot
Stir together in a large bowl:
- 2 cups of warm water
- 1/4 tsp. salt
- 1/2 cup sugar
- 1/2 cup lard
- 2 lightly beaten eggs
Blend together:
- 31/4 cups white flour (half whole wheat or rye if you want)
- 1/2 cup dry milk
Add yeast mixture to water and egg mixture, stir gently in a large bowl. Add flour and dry milk blend, with a whisk, getting the lumps out. Add an additional 3 1/4 cups of flour, a little at a time, this will turn into dough, and pull away from the sides of the bowl. You may need to add a little more flour if the dough remains sticky.
Instructions - Cover and let rest for 10 minutes
- Knead on a floured pastry cloth
- Let rise to double in size, in buttered bowl
- Form into rolls, half the finished size
- Let rest to double size
- Bake at 375° for 15 minutes, or until golden brown
- Brush with butter
